For the base of the cake
For the coffee cream
  • 1 cup (200 grams) of sugar
  • just over 1 cup ( 250 grams) of butter
  • 2 tablespoon (20 grams) of instant coffee
  • 3/4 oz (20 grams) of gelatin (for non-vegetarians)
  • 3/4 oz (20 grams) of agar,agar-agar or kanten/carrageenan,carrageen, or irish moss/vegan gel ( for vegetarians), also to add 1 tablespoon of gelatin=1 1/2 tablespoon of vegan jel.
  • 1/2 cup (50 grams) of castor sugar
  • 2 cups( 500 ml) of fresh whole milk
  • 2 cups( 500 ml) of extra double cream
  • 4 egg yolk
For the soaking syrup
  • 1-2 tablespoon of normal sugar
  • 1 tablespoon (10 grams) of instant coffee
  • just under 1/2 cup ( 100 ml) of water
